Combine fruit, sugar, corn starch, lemon zest, lemon juice, and salt. Add to small pot, and bring to a boil.
Simmer for 5 minutes or until thickened. Remove from heat. Stir in vanilla, and let cool for 15 minutes.
Roll out pie crusts on a flat surface, and use a 4 inch round cookie cutter to cut circles out of your pie dough.
Place 1 tbsp cooled fruit filling in the center of each circle. Brush the edges of your dough circle with water and fold in half. Use a fork to crimp the edges, sealing hand pies.
Use a sharp paring knife to cut a little 'x' on the top. This will allow steam to escape.
Brush tops of pie with heavy whipping cream and then sprinkle with coarse sugar.
Spray Air Fryer basket with non-stick butter spray, and place hand pies in a single layer. Air fry at 350 F for 7-8 minutes or until golden brown.
