Apple Cider Donuts

Ingredients

  • 2 cups fresh apple cider
  • 2 cups flour
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 pinch nutmeg
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup warm milk
  • 2 tbsp unsalted butter melted
  • 3/4 tsp vanilla extract
  • 1 large egg

Topping

  • 1 cup white sugar
  • 1 tbsp white sugar
  • 4 tbsp unsalted butter melted

Instructions

  • Preheat oven to 375 degrees F. Butter donut pan. 
  • Pour apple cider into a saucepan and place over medium high heat. Simmer and let cook until it’s reduced to ½ cup. Set aside. 
  • Combine flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, and nutmeg in a large bowl. Set aside. 
  • Combine ½ cup white sugar, brown sugar, milk, 2 tablespoons melted butter, vanilla extract, and egg in a bowl together until combined. Add these ingredients and the apple cider reduction to the dry ingredients. Do not over mix. 
  • Pipe batter into the prepared donut pan(s), filling them about ¾ of the way up. We used a gallon sized plastic bag and cut the corner off and it worked just fine!
  • Bake about 10-12 minutes or until the tops are lightly browned. Let cool in the pan for about 10 minutes. 
  • While slightly warm, dip each donut in melted butter. Mix 1 cup white sugar and 1 tablespoon cinnamon together in a bowl. Toss the donuts to coat.
