Mint Chocolate Cupcakes in Fiesta Ramekins

For St. Patrick’s Day, we thought we’d get a little minty, plus throw in a healthy splash of rainbow for good measure with some Mint Chocolate Cupcakes baked up Ramekins in an assortment of nearly every one of Fiesta’s signature rainbow of colors. 

Start by selecting a oven ready Ramekins in a rainbow of colors. Did you know Fiesta’s bakeware (like the Ramekins) are safe in the oven up to 450 degrees? All other tableware is safe in the oven up to 350 degrees. That’s everything… even dinner plates and cups! 

Next, bake up your favorite chocolate cake recipe. We just used a quick and easy boxed recipe. 

Next is the star of the show… the Peppermint FROSTING! It’s so simple and SOOOOO delicious! 

Fiesta Dinnerware Peppermint Frosting

Ingredients

  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 3 drops green food coloring

Instructions

  • Beat all ingredients together on medium speed until smooth.

After the cupcakes are baked and completely cooled, you can frost your cupcakes. We sprinkled the frosted cupcakes with gold stars because it’s St. Patrick’s Day and we needed a little gold sparkle at the end of our rainbow.
