Fiesta Apple Spiced Upside Down Cake Recipe

Ingredients

  • 10 tbsp unsalted butter room temperature
  • 1/2 cup packed brown sugar
  • 1 1/2 lbs apples (or 3-4 medium apples) peeled, cored & sliced
  • 1 tbsp fresh lemon juice
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pumpkin spice seasoning
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup milk

Instructions

  • Preheat oven to 350 degrees. Coat bottom and sides of a 9” square or round pan with 2 Tbs of butter. Sprinkle bottom with brown sugar. 
  • In a mixing bowl, toss apples with lemon juice. Arrange apples in a circular pattern at the bottom of the prepared pan. 
  • In a bowl, mix flour, baking powder, salt, and pumpkin seasoning. Set aside.
  • With an electric mixer, beat 8 Tbs butter and granulated sugar until light and fluffy. Add eggs and vanilla and beat until incorporated. With mixer on low, alternate flour mixture and milk until fully incorporated. 
  • Pour batter over apples and smooth the top. 
  • Bake 45-55 minutes or until a toothpick inserted in the middle comes out clean. 
  • Cool for at least 30 minutes. 
  • Run a knife along the edge of the pan and invert onto a serving platter. Enjoy!
